Really? I never noticed any problems with the sound when I was watching it. Maybe it has something to do with the TV or computer you used.
I think it might actually have something to do with the Sci-Fi Channel, 'cause I've noticed the same problem with the two Stargates on both of our TVs here and sophomore year in the Mather Wellness lounge. DVDs I watch, on the other hand, don't really have that problem of the music being louder than the dialogue.
Or maybe I just need my ears checked.
Buffy and Angel never grabbed me, but Firefly did, in the same way that Farscape did (but more so). I'm glad you're watching more, and I think you may find your opinion changing for the better.
