Let me talk to a friend who's still at UT to get the 411 on very-near-campus housing. Things have changed a lot in ~two years.
But Woodmeade South and Crossing Point are very close to UT with regularly-running bus service. To visit those, go down cumberland avenue (the main street) towards downtown, and take a right onto henley street. go across that bridge and turn left immediately after burger king. Northwood is on your right (I lived there) and Crossing Point is on your left. I also lived in Sterling University Heights, which also has regularly-running bus service... the directions are a little more confusing to get there but Mapquest Knotty Pine Way.
Some grad students lived in the upperclassman apartment-style dorm (Andy Holt Apts) but I wouldn't suggest it.
What I would suggest? a meal plan. The dining services program is fabulous.
