Granted, I think this was entirely Peter David trying and not entirely succeeding at being funny, but thereis that bit at the end of "Soul Mates" where she asks Susan about these odd cramps she's been getting. Perhaps the new body's way of saying "O HAI YOU SHOULD MAKE A HUMAN BABY NOW"?
I tend to think that the change left her exactly half-Minbari, half-human, but this is based purely on my own interest in xenobiology. It would actually make more sense, from a "restoring the balance" perspective, if she visibly turned entirely human, seeing as Sinclair looked pretty Minbari.
