I use Handbrake, which may or may not be Mac-only. I've actually only made one vid from AVIs before, because half the show hasn't been released on DVD over here. I use iMovie to actually vid, so I need to convert anything I use into MOV files anyway, which Handbrake automatically exports to.

I've used MacX DVD Ripper Pro as well, which is nice, but gives you an annoying black border along the left side of every clip. Handbrake is a bit more difficult to use, but worth it.
