The books actually have them staying mounted, as well as much of the army being mounted. They also wait for the orcs to come to them, rather than the other way around - at least that's how I read it anyway.
That would make sense. I read the books last year around this time, and my memory of the finer details is somewhat less than clear, but that sounds reasonable--I'd rather be on a horse than on foot in that kind of situation!
And I think it's interesting to note that the Rohirrim are actually supposed to send a good number of their horses to Mordor each year in tribute, so the horses that Mordor have could possibly be very similar!
