Muffiny goodness
Apr. 12th, 2012 06:54 pmI just made the BEST MUFFINS EVER. Strawberry lemonade muffins! I got the recipe out of an issue of Southern Living, and it's also available here.

Ummmm, it makes a lot more batter than you might expect, and we've only got the one muffin pan, so we also have...strawberry lemonade quickbread? Same taste, though!
The recipe calls for strawberry curd to top it, but that looked like a lot of work, and I've been wanting to try lemon curd for a while anyway (IT IS DELICIOUS), so I went with that.
We used the rest of the strawberries to top a big salad. Not as good as the muffins, but who cares when the muffins are that good?

And lemon curd is amazing, isn't it?
It is! It tastes...actually it tastes exactly like the lemon part of a lemon bar, which I love.
Try lemon curd on toast; it's a really nice breakfast.
Hmmm. I am anti-toast, but I could perhaps do an English muffin or a biscuit. (American biscuit, I should probably specify. For that matter, American "English muffin," too. ;))
